O Mar a Dentro é o novo projeto do Bruno e do João Paulo que tinham a ideia de abrir um restaurante em Aveiro, mas que num golpe do destino, apostaram em Ílhavo num espaço que fez história na gastronomia da cidade desde meados dos anos 80 (O Coutinho). Em boa hora o fizeram, e na cidade dos capitães do bacalhau, decidiram trabalhar algo inusitado mas que faz todo os sentido – o que era a gastronomia a bordo dos bacalhoeiros.

Mar a Dentro es el nuevo proyecto de Bruno y João Paulo que tuvieron la idea de abrir un restaurante en Aveiro, pero que, en un golpe del destino, apostaron por Ílhavo en un espacio que ha hecho historia en la gastronomía de la ciudad desde mediados de los 80 (Coutinho). Mar A Dentro ist das neue Projekt von Bruno und João Paulo, die die Vorstellung hatten, ein Restaurant in Aveiro zu eröffnen, aber in einer Geisteseingabe entschieden sie sich für ílhavo, ein Ort, der seit Mitte der 80er Jahre Geschichte in der Gastronomie schreibt. Zu der Zeit, als sie es starteten, beschlossen sie, an etwas Ungewöhnlichem zu arbeiten: Wie war die Verpflegung auf den Booten der Kabeljaufischer? Eine kulinarische Arbeit, aber auch versucht, die reiche Geschichte der Kabeljau-Fischerei kennenzulernen, die diese Stadt von allen anderen unterscheidet. Als ich für Kabeljau fischte, was habe ich an Bord gegessen, wie wurde der Kabeljau gekocht? Es gibt eine ganze Welt zu erforschen und zu genießen, und diese beiden Unternehmer setzen auf Risiko und machen ihre Arbeit nicht für irgendein Museum, sondern in erster Linie für den Gaumen. Le Mar a Dentro est le nouveau projet de Bruno et João Paulo qui avaient l’idée d’ouvrir un restaurant à Aveiro, mais qui dans un coup du sort, ont parié à Ílhavo sur un espace qui a fait l’histoire de la gastronomie de la ville depuis le milieu des années 80 (Coutinho). Mar a Dentro is the new project of Bruno and João Paulo, who had the idea of opening a restaurant in Aveiro, but in a stroke of fate they opted for Ílhavo in a place that has made history in the city’s gastronomy since the mid-80s (Coutinho).
